How to smoke a whole chicken in an offset smoker?
So, you are about to smoke a whole chicken in an offset smoker. Well, first of all, you gotta cut the meat properly. For that, you can start by cutting out the backbone of the chicken and then press the opposite side to crack the breast bone. That way, you will get a nice flat chicken for smoking.
Take half teaspoon of salt for each pound of chicken and sprinkle all over the chicken. You have to sprinkle the salt mostly at the inside of the chicken and a little bit at the upper side. Make sure you do this at least two hours before smoking.
For making a perfect smoke chicken rub you can use 1 tablespoon of onion powder, 1 tablespoon of white sugar, 1 tablespoon paprika, 2 teaspoon garlic powder, 1 teaspoon black pepper, 1 and a half teaspoon of cayenne pepper

How to smoke brisket in an offset smoker?
First off, look around the brisket if there’s has any piece of fat in the brisket. If you get some, just trim them off. By smoking fatty brisket you will get a fatty taste that is definitely not acceptable. On the other hand, if you trim all the fat off then your brisket will too much dry.
Try to keep around a quarter of fat which considered as standard. Make sure you trim the fat off right after you take the brisket out from the fridge as at that time you will get the brisket in cold condition.
After the fat trimming put some stadium mustard on each side of the brisket precisely. After that put the rub on the brisket evenly. The rub pretty much traditional.

Now rub this paste all over the bird. Make sure you put a well amount of paste on the exposed meat portion, underneath the skin and also add some on the outside of the skin.
